Hello Nayana,
Thank you so much for visiting my blog. I love your blog and I'm going to try this recipe today, since melons are in season right now. I will place you on my blog roll if you don't mind, because I want to try more of your recipes. I absolutely love indian food.
About freezing tomatoes, You cannot use them in dishes that require fresh tomatoes. They are best used to make sauce instead of purchasing the canned whole tomatoes. Of course fresh is always best for everything and If you can get fresh tomatoes year round, I would keep using fresh tomatoes over frozen for your sauces ans soups.
In my neck of the woods we only have fresh tomatoes for a very short time (about two months), So I freeze what I can out of my veggie garden to prepare for our brutal winters.
during winter and spring fresh tomatoes are very expensive to buy where I live, so I only buy them to use in fresh salads.
Wishing you and very pleasant day!
